Zucchini Falafels

If you grow your own zucchini like me, you might have way more than you know what to do with. These falafels are crispy on the outside and soft on the inside, and taste amazing with a tahini yogurt dip!


SO easy to make and sooo good… SAVE this one for later!



🔥INGREDIENTS:

2 cups cooked chickpeas

1 onion

2 cloves garlic

1 bunch of parsley

1 zucchini, shredded

7 tbsp flour of choice (I used chickpea)

1 tbsp each: salt, ground coriander, cumin

Squeeze of lemon

Olive oil (for cooking)


🔥DIP INGREDIENTS:

4 tbsp vegan yogurt (I use coconut)

1 tbsp tahini

Salt to taste

1/2 tsp each: garlic powder, chili flakes

Squeeze of lemon


🔥INSTRUCTIONS:

1– Pulse chickpeas, onion, garlic and parsley

2– Combine with remaining ingredients and shape into falafels

3– Fry or air fry until golden brown, or bake at 400F for 25 minutes

4– While cooking, combine dip ingredients
