Healthy Spinach Artichoke Dip

This dip only has 8 ingredients, is gluten-free, dairy-free and tastes just like the original! So delicious, and comes together in just minutes for a tasty treat you're sure to make again and again!


For the sauce, blend the following in a food processor:

- 1 can white cannellini beans

- 1 tbsp olive oil

- salt, pepper, paprika, rosemary, thyme, dill, oregano

- 2 garlic cloves

- 1 tbsp lemon juice

- 1 cup chopped artichoke hearts

- 2 cups chopped spinach

- 1/2 cup coconut milk


After blending:

  1. Add some veggie broth to achieve desired consistency, then place into an oven safe round dish. Broil under high on the top rack for about 5 minutes, watching closely, and pulling the dip out when the top starts to brown.

I serve these with grain-free Siete tortilla chips!
