Recipe
Yields: 2 servings
Total time: 10 minutes
Ingredients:
1 package organic chicken breasts
Salt and pepper to taste
1 tablespoon paprika
1 tablespoon oregano
2 tablespoons extra virgin coconut oil, divided
Approx. 6 cups red beets, spiralized
2 tablespoons homemade pesto
1/4 cup walnuts, chopped
Parmesan cheese, to garnish
Instructions:
1. Heat 1 tbsp coconut oil on a stovetop pan. Sprinkle the chicken breasts with the spices, then cook in the coconut oil until browned, about 5 minutes each side depending on thickness.
2. While chicken is cooking, heat the remaining tbsp of coconut oil in another stovetop pan. Add the spiralized beets and cook about 10 minutes, stirring occasionally.
3. Once chicken is done, remove from pan and chop into small strips. Add the chicken to the beets pan, then combine the pesto and walnuts, mixing well.
4. Sprinkle with Parmesan cheese and enjoy!
