This extremely easy chicken only takes about 20 minutes to make, with barely any effort. Great to serve alongside some homemade brown "fried" rice, cauliflower rice, beans or veggies!
Marinade Ingredients:
- 1/3 cup fresh cilantro
- 1/3 cup extra virgin olive oil
- 3 limes, juiced
- 3 garlic cloves, crushed
- 1 tsp cumin
- 1 tsp pink himalayan salt
- 1/2 tsp ground black pepper
- 1 tsp red pepper flakes
Ingredients:
- 1 lb organic chicken breasts
- 1 small red onion, cut into small slices
- 1 small green pepper, cut into small slices
Instructions:
Combine ingredients for marinade in a large ziplock bag, put the chicken in, and let sit for about 30 min - 1 hour in the refrigerator.
Preheat the oven to 375F. If you don't have a cast iron pan, cover a large baking sheet with tin foil and spray some extra virgin olive oil on top to prevent sticking.
In a large cast iron pan (or skillet if you don't have one), sear the chicken for about 4 minutes on each side, over medium high heat.
Add onion and peppers to the cast iron, or transfer the chicken to your prepared baking sheet and top with peppers and onions. Place in oven for about 15 minutes, or until chicken is cooked through.
Remove from oven, set aside to cool.
