Easy to assemble, gluten free and dairy free with the option to layer chili, salsa and cheese for an extra treat 😋
For the bean cups:
- 1 can organic black beans
- 6 tablespoons gluten free flour of choice
- 1 tsp cumin
- 1/2 tsp celery salt
- 1 tsp paprika
- 1/2 tsp hot sauce
- 1 tbsp fresh lemon juice
- 2 garlic cloves, minced
- sea salt, to taste
Guacamole ingredients:
- 2 avocados, smashed
- 1 garlic clove, minced
- juice of 1 lime
- 1 tbsp fresh cilantro, chopped
- sea salt, to taste
Instructions:
1. Preheat oven to 350F
2. Pulse garlic in a food processor, then add beans and remaining ingredients. Blend, scraping down the sides, until a nice dough is formed.
3. Spray a mini muffin tin with coconut oil spray, and place about a tablespoon of the bean mixture into each dish. I used a small shot glass to press down and create a “cup.”
4. Bake in the oven for 15 minutes. Remove and let cool while you make the guac.
5. If you’re choosing to use chili/cheese, add this layer first, then the guac, and optionally the salsa on top!
