I’ve been on this mug cake kick lately. This one is gluten free, vegan, dairy/egg free and can even be made sugar free! With a 2 minute bake in the microwave, its an easy treat to enjoy when you get a craving!
Mix it together ⬇️
- 1/2 cup almond flour (or 1/3 cup oat or cassava flour)
- 1 flax egg (1 tbsp ground flax + 3 tbsp water, sit for 10 min)
- 1/2 ripe banana, mashed
- 3 tbsp plant milk
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- pinch of sea salt
- 1 tbsp dark chocolate chips (omit for sugar free)
➡️ Mix all ingredients together and put in a coffee mug. Microwave for 2 minutes. I put mine in for an extra 30 seconds to make it more “cake like” and fluffier. Option to add a couple tablespoons of full fat coconut milk for a topping! 🥥
