When you're craving something sweet, but don't have time to make anything fancy, mug cakes are the BEST! Using all healthy ingredients, you can make this gluten, dairy, egg and refined sugar free!
Ingredients:
-1/2 cup almond flour
-1/3 tsp baking powder
-pinch of sea salt
-2 tbsp vanilla protein powder
-1 flax egg or regular egg (1 tbsp ground flaxseed + 2 tbsp water, let sit for 5 min)
-1/4 cup water or plant milk
-1/2 tsp vanilla extract
-1/2 tsp cinnamon
Frosting:
-1/4 cup coconut dairy-free yogurt
-1 tbsp vanilla protein powder
-cinnamon to sprinkle on top
How to do it:
1. Mix together all mug cake ingredients, leaving out the cinnamon to swirl in last.
2. Spray a coffee mug with olive oil spray and add in the batter. Cook in microwave for 2 minutes.
3. Mix together frosting while mug cake is cooking/cooling for at least another 2 minutes.
4. Top with frosting and extra cinnamon and enjoy!!! 🤍☕️
